Cooking With John – Part 6

At the end of the day I had taken a couple cans. One or two of them were from the dollar store, some simple spices. They were what were sitting on the shelf and I made a delicious dish. It was one that was healthy. All the ingredients I could read. You know they say if there’s …..

ingredients on the piece that a three a third grader can’t spell or read, you shouldn’t be eating the stuff you know. So this was all pretty natural and at the end of the day it it actually made kind of a nice dish I’m hoping to improve on.

But sometimes you just have to see what’s there. I’m a great believer in that if you have an ingredient that’s kind of lackluster, sometimes if you season that ingredient for itself to enhance it, that when it’s added to whatever you’re fixing, the whole piece comes out better. Case in point would be if you’re making a salad and you’ve got some kind of tired tomatoes, if you slice those and add some vinegar and maybe a little bit of sugar and salt to them and let them macerate in their juices before adding them to the salad, all of a sudden they’ve got a nice depth of taste to them beyond the dressing and stuff so.

There’s always good cooking at my house. If you want some good cooking come and ask Uncle John if he’ll cook for you.
